My favourite banana bread

Vegan Banana Bread
Makes 1 large loaf
Vegan, refined sugar free
4 ripe bananas
2 tbsp chia seeds
6 tbsp filtered water
1 & 1/2 C wholemeal spelt flour
1 tsp bi-carb soda
1 tsp baking powder
1 tsp ground cinnamon
1/2 C almond meal
1/2 C Loving Earth coconut oil, melted
1/2 C coconut milk
1 tbsp apple cider vinegar
1 tsp vanilla powder or extract
Preheat your oven to 180 degrees celcius. Line a loaf pan with baking paper.
Mash 3 of the bananas & slice 1 lengthways. Set aside the sliced banana for the top.
Combine the chia seeds & water in a small jug & leave for ~5 minutes, until a gel consistency.
Sift the spelt flour, bi card, baking powder & cinnamon into a large bowl. Add the almond meal and mix to combine.
To the chia gel add the coconut sugar, coconut oil, coconut milk, apple cider vinegar & vanilla. Whisk until combined.
Pour the wet ingredients into the dry and fold together.
Spoon the mixture into the prepared baking tin & place in the preheated oven. Cook for 45 - 55 minutes, or until golden on top & a skewer comes out clean.
